What Actually Makes a Cookie Premium? (It's Not What You Think)

The word 'premium' gets thrown around a lot. Here's what it actually means when it comes to cookies — and why most brands claiming it are bluffing.

Walk into any grocery store or scroll through any cookie delivery app and you'll see the word 'premium' everywhere. Premium chocolate. Premium ingredients. Premium experience. But crack open the ingredient list on most of these 'premium' cookies and you'll find the same thing: enriched flour, corn syrup, palm oil or soybean oil, artificial flavoring, and a list of preservatives that sounds like a chemistry exam. Premium in name. Mass-produced in reality.

At Après Cookies, we built our entire business on a different premise: if you're going to call something premium, the ingredients have to actually be premium. Here's what that looks like in practice.

French Flour: The Foundation That Changes Everything

Most American cookies are made with American all-purpose flour. It works. But it's not special. We use French flour — specifically, a lower-protein flour that's standard in French patisseries and boulangeries. Here's why it matters: lower protein content means less gluten development, which means a more tender, delicate crumb. The texture you get with French flour is noticeably different from what you get with American flour. It's also more expensive and harder to source. Most commercial bakeries won't bother. We decided that was exactly the point.

European Grass-Fed Butter: The Flavor Multiplier

Butter is the most important ingredient in a cookie. Which makes the choice of butter one of the most important decisions a baker makes. Standard American butter contains about 80% fat. European-style butter — made from the milk of grass-fed cows — contains 82-84% fat. That difference sounds small. The flavor difference is significant. Grass-fed cows produce milk with a richer, more complex fatty acid profile. The resulting butter has a deeper, more nuanced flavor. When you bake with it, that complexity comes through in the final cookie. European grass-fed butter costs roughly twice what standard butter costs. We use it anyway.

Zero Corn Syrup. Zero Seed Oils. Zero Preservatives.

Here's what we don't use — and why it matters.

Corn syrup

Used in most commercial cookies to increase shelf life and add sweetness cheaply. It contributes to the blood sugar spike-and-crash cycle that makes you feel vaguely terrible after eating most packaged cookies. We don't use it.

Seed oils (soybean, canola, palm)

The default fat in mass-produced baked goods. Cheap, shelf-stable, flavorless. We use real butter instead — which means our cookies are more expensive to make and have a shorter shelf life. That's a feature, not a bug. It means our cookies are fresh.

Preservatives

We bake in small batches and ship fresh. We don't need preservatives, and we don't use them. If your cookie can sit on a shelf for six months, it's not a real cookie.

Small-Batch Baking: Why Scale Is the Enemy of Quality

The reason most commercial cookies taste the way they do isn't the recipe — it's the scale. When you're producing thousands of cookies per hour, you can't use French flour and European butter. The economics don't work. You have to cut corners. We make cookies in small batches. Every batch is consistent because it's manageable. Quality doesn't get sacrificed to keep up with a production line.

The Aspen Standard

We're based in Aspen, Colorado — a place with a reputation for quality, luxury, and doing things right. That's not just a brand story. It's a standard we hold ourselves to. When you receive an Après Cookies box — whether you ordered it for yourself or received it as a corporate gift — the difference is in the first bite. You'll notice the texture. You'll notice the flavor. And you won't feel like you need to apologize to your body for eating one.

That's what premium actually means.
